Untello Tre Latti is a fine cheese, produced with a refined blend
of pasteurized cow, sheep and goat milk, which gives it a rich and
multifaceted aromatic profile. During maturation, the cheese is
treated with olive oil washes, which give the rind a greasy
consistency and a grey/green color, enriched by natural molds. The
paste is soft and pale ivory, with small, evenly distributed holes.
The taste is fine and complex, harmoniously combining the
characteristics of the three types of milk for a unique sensory
experience.

Organoleptic Characteristics
Appearance: Cylindrical shape with a greasy grey/green rind,
obtained from washing with olive oil and the development of natural
molds. Pale ivory paste, soft, with small, well-distributed
eyes.
Aroma: Delicate and complex, with rich lactic notes and hints of
natural mold, which add aromatic depth.
Flavor: Fine and tasty, with a perfect balance between the
sweetness of cow's milk, the flavor of sheep's milk and the fresh
and aromatic notes of goat's milk. The flavor is enveloping and
pleasantly persistent.
Texture: Compact, but tender when cut, with a texture that melts in
the mouth, offering a velvety sensation.
