Untello di Pecora is a cheese made with pasteurized sheep's milk,
known for its compact consistency and a unique rind, obtained
thanks to repeated washings with olive oil during maturation. This
process gives the rind a greasy appearance and a grey/green color,
enriched by natural molds that amplify its aromatic profile. The
paste is a light ivory color, tender when cut, and has small,
well-distributed holes. Its flavor is full and intense, but
balanced, with a delicate aroma that makes this cheese perfect to
enjoy alone or in gourmet combinations.
