Raschera DOP is a cheese with Protected Designation of Origin,
produced with raw cow's milk exclusively from the province of
Cuneo. Its distinctive square shape with flat sides and irregular
sides makes it unique and easily recognizable. The thin and elastic
rind, gray or yellowish gray in color, encloses a firm, elastic
paste, white or ivory white in color, enriched with small irregular
holes. Its delicate and fine flavor, with fresh lactic notes,
evolves towards a moderate flavor and a slight spiciness with
aging, giving a complex aromatic profile. Raschera is ideal both to
be enjoyed pure and as an ingredient in traditional and innovative
recipes.

With aging, the flavor develops a moderate spiciness, offering
