Pecorino Fresco al Tartufo is a cheese with an unmistakable
flavour, born from the union of pasteurised sheep's milk and the
enveloping scent of summer truffle. The short maturation, of
fifteen to twenty days, preserves the freshness and creaminess of
the cheese, maximising the intensity of the truffle. It is an ideal
product for those who want a fresh cheese but rich in character,
with a perfect balance between the sweetness of the pecorino and
the strong aroma of the truffle.

Organoleptic Characteristics
Appearance: Cylindrical shape with white rind decorated with
truffle flakes, ivory white paste with well-distributed truffle
flakes.
Aroma: Intense and enveloping, dominated by the character of the
summer truffle, with fresh lactic notes that complement the scent
of the truffle.
Flavor: Delicate and well-balanced, with the sweetness and softness
of the sheep's milk that combine with the intensity of the
truffle, leaving a persistent aromatic aftertaste.
