We produce 2 types of green according to method of preparation         Â
 (1)    Spanish style
After we collect the olives , we make a short alkaline treatment to neutralize the bitter oleuropeine acid from the unripe olives and then olives is put into brine where a slow natural lactic fermentation occurs for a period last from two to three months and the bitterness of the olives is mostly eliminated after passing this period.
Finally; olives is desalted and prepared in our special way delivering a unique, delicious, nutritive and healthy product in different types of packages according to customers' request..
 (2) Water/salt style ( Egyptian traditional method )
After we collect the olives, we make a special treatment by saline solution at certain concentration (*0:*2% NACL) and saved in our stores from 3 to 4 months until become suitable for oxidation process or other chemical process.
