Parsley is one of the most well known and popular culinary herbs in the world. It imparts a spicy, slightly sweet flavour, which can be conserved by drying. The special aroma of this culinary herb is produced by an essential oil called apiole. In ancient times it was believed that this essential oil could boost virility. The bitter-tasting compounds of the leaves stimulate digestion and are supposed to prevent flatulence.

Flavour

Parsley tastes spicy, fresh and mildly sweet, has light citrus and anise notes. Flat-leaf parsley is more aromatic and has a more rounded flavour than the curly-leaf variety.

Parsley is a truly universal culinary herb. It is an indispensable ingredient of all kinds of soups, from clear broths to potages. It is added to poultry and especially poultry stuffing. It can be used for both freshwater and saltwater fish, as well as egg dishes and crudités.
