The activity of enzyme increases with the raising of temperature. When the temperature above *5℃, the activity of enzyme declines rapidly with the increasing of temperature, suitable temperature is *0℃, and suitable PH is 4.**4.5. It applies in alcohol, millet wine, ethanol, beer, lactic acid. It uses in fermentation of antibiotic, organic acid, aminoacid, vitamin, and decomposition of oligose, it also uses to produce all specification of glucose.
