A more recent variety, once called 'Rizotto' Â , Sant Andrea
has  become  very  popular today.
The grains are small and have a high starch content and this rice
is therefore difficult to overcook. Â Perfect for a beautiful
 creamy risotto, Sant Andrea gives a medium consistency after
boiling.Â
This rice is grown in a region , where the
microclimate, the geothermal spring waters of the area  and
the clay soil rich in iron give the grain particular culinary
