through a sorting process since the time of harvest through an
assessment of the quality of the liquid sap. This delicate cooking
process requires skill and attention from farmers so as not to lose
the quality of the juice due to overcooking or other mishandling.

Javandarus Organic Palm Sugar originates from the lush Javanese
landscape of the Indonesian archipelago. It pays tribute to the
regions proud farming heritage and integrates this with modern
standards of quality control. Our sugar made from palm flowers is a
delicious and healthy alternative to cane sugar. It has a
candy-like taste, comes from natural organic ingredients, goes
through minimal processing, and has not gone through the filter
process.
How Javandaru Organic Palm Sugar is Made
Neera, palm flower nectar sap always blooms twice a day and our
arenga farmers harvest twice a day. Farmers climb the palm tree and
collect the sugar blossom nectar by gently slicing the flower.
After every harvest, we transfer the nectar to the kettle. The
evaporation process lowers the moisture content of the nectar
before we allow it to harden into dense nectar bricks. We then boil
the nectar juice until it thickens and changes color from clear to
brown, then goes through a granulation process by hand and then
according to specifications.

Common Misconception
Palm sugar is sometimes difficult for many people to distinguish
from Brown Sugar, Coconut Sugar by the naked eye. Arenga sugar is
type of sweetener that derives from palm tree (Arenga Pinnata).
Arenga wears a much darker brown color, sometimes appearing
black-tinted (thus its common name in some places, Black Sugar
Palm); coconut sugar owns a brown that ranges from bright yellow to
reddish-brown.
