A thick syrup produced in refining raw sugar and ranging from light
to dark brown in color.
The treatment of various raw
materials coming from sugar cane, such as cane juice, cane molasses
or syrup and HTM (High Test Molasses). These processes are
applicable also to sweet
sorghum.sugar cane molasses.Â
Sulfured
molasses is made from young sugar cane. Sulfur dioxide,
which acts as a preservative, is added during the sugar extraction
process. Unsulfured molasses is made from mature sugar cane, which
does not require such treatment. There are three grades of
molasses: mild or barbados, also known as first
molasses; dark, or second molasses; and blackstrap.
These grades may be sulfured or unsulfured. To make molasses,
the cane of a sugar plant is harvested and stripped of its
leaves.
