 Artichokes to originate and be prepared from clean sound crop. After harvest, the young, tender and healthy artichokes are sorted, and the bottoms are graded into several sizes;

 From the time of grading, peeling and cutting, artichokes has to be kept in a light acidic medium to maintain its color and avoid oxidation, while the time from receiving to the end product shall not exceed one hour span.
