*Protein coagulant
Glucono-δ-lactone is mainly used as a
coagulant for protein in the food industry.
It is used to replace brine and calcium sulfate
for tofu. The process is simple, and the compared with traditional tofu, the color is
more clean & white, delicate and delicious, no odor, no loss of protein, high
production(1 kg can produce 5kg toufu), and has a strong antiseptic effect, it can
prolong the fresh-keeping period of three to five days at room temperature.
Conducive to improving the supply of tofu and bean products in summer, it is
convenient for industrial mechanization and continuous production.
*Milk gelling agent
It is mainly used for the production of yogurt or cheese. In
industrial use, the gel strength of the milk formed by
acidification with GDL is about twice that of the fermented type.
Dosage
Cheese: Add according to 0.***0.3% of milk weight
*Preservative,quality improver
Used in the meat industry, is added to sausages, rolls to
impart the desired color, reduce the heat treatment time,
accelerates ripening and color formation of sausages and
natural semi-finished products involved in the formation of
taste; In the meat industry as a color amplifier, which reduces the use of toxic
substances, nitrites;

*Leavening agent
Glucono-delta-lactone is shared with baking soda and can
