Gellan gum can be used as gelatinizer, stabilizing agent, texture modifier, suspending agent and film-former. It can be extremely effective in a low use, meanwhile which can improve the texture, appearance and taste of products. It also has excellent compound compatibility, so that which shall get perfect usage effect when mixed with other gums. 

      Gellan gum is widely used in food industry, such as dairy products, beverages, quick-frozen food, bread, cakes, meat, suspending fruit juice, orange pulpy juice, jelly, ice cream, candy, dessert, fermented dairy products, chocolate milk, instant coffee, fish products, spices, ready-to-use food, condiment jam, sauces, etc. It can also be applied to household care, cosmetics, adhesives, toothpaste, soft and hard medicine capsules.

Low acyl gellan gum
Low acyl gellan gum, it can form firm and brittle gels. It can be applied to beverage, jelly, candy, baked food and personal care.

Description:  LT***0 it is a kind of multifunctional gellan gum with low transparency, which is a ideal gelatinizer, thickner,stabilizer and filmogen and widely used in food and personal care application without transparent requirment. 
Features: Shear reversible gel, heat reversible gel, milk white opacifier, excellentfragrance release, efficient texture ameliorant, elastic gel texture, and it can form flowing gel .
Application:Soup, candy, dessert gel, fermentation dairy prodcuts(pH<4.6), seasoning, instant condiment, fruit stuffing and bechamel.
Usage: Dosage of LT***0 is 0.**5% *1%; Users can add tap water when LT***0 gellan gum is under stiring, after heating to *0°C, cool it so that it can curdle and become gel. Then add monovalent and divalention (K+、Na+、Ca++ and Mg++) so that which can change the gel strength.
