Caraway oil is steam-distilled from the dried, crushed, ripe fruits
yields 2 - 8 %. It is offered in markets in at least two grades:
crude and double rectified. The crude oil has an initial note
of nauseating, almost amine-like type; the rectified oil does not
have this odor.

Latin name of Caraway: Carum Carvi.
Physical characteristics:
Caraway seed is a colorless to pale-yellow liquid; darkens and
thickens with age.
Chemical characteristics:
Caraway seed oil contains; carvone, gamma terpinene, timonene,
linalool, linalyl acetate, thymol.
Usage of Caraway seed oil:
Aromatherapy, food flavors, pharmaceuticals for calming the nerves,
poor appetite, heartburn, nausea, cramping, spasms of stomach and
intestines, starting menstruation, and other cases.
